Recipe makeover CUPCAKES
I will admit I borrowed this recipe from another blogger, not sure who, speak up if it is you!! Yummy healthier chocolate cupcakes!
Big Simple Chocolate Cupcakes
• Chocolate Fudge cake mix (I used Betty Crocker fudge chocolate Cake Mix)
• 1-15oz can of pumpkin
• 2/3 cup of water
• Sprinkles (optional)
• Non-stick cooking spray
Preheat the oven to 325 degrees
Beat the cake mix, pumpkin and water for about 2-3 minutes. The batter will seem light and airy.
Spray 2 6-cup muffin pans with non-stick cooking spray. Scoop the batter into the muffin pan and top with sprinkles. Bake for 35-40 minutes.
You can make 12 large cupcakes, for about 4 points or 24 smaller ones for 2 points

I've made these before and they are amazing! The pumpkin makes 'em nice and moist.

I have made these before. Love the pumpkin in spice cake but do you know you can also make cupcakes/cake with diet soda? Its not as dense as the pumpkin version. Good for variety. Just use a diet soda that would go good with the cake of choice ie: yellow=diet sprite, choc can be diet coke, diet dr pepper, cherry chip or strawberry can have a red diet soda.
I love making over "bad" things in a WW way!
oh, sorry, if you didn't already know you simply add one can or 12oz of diet soda in place of the egg, oil etc. Nothing else. Its good. My kids even love these varieties.
Yum!! Now I have a huge craving for cupcakes!
