One question

So as many of you know I am a veggie virgin. I didn't grow up eating veggies at all besides corn and potatoes. I am looking for some easy tasty healthy ways to cook up my veggies. Honestly I don't even know how or what to roast or what seasonings go with what. So let me know about your go to veggie recipes! Please!

Here's a great way to cook any green veggie including broccoli, brussel sprouts, spinach, green beans, well really I guess they don't have to be green.

Medium heat in any kind of skillet and for a minute or two just warm the veggies up.. char them a little on some of the sides. Add two or three tablespoons of water and cover. This will steam the veggies. Leave it covered until it has reached your desired done-ness (some people like veggies crunchier than others!).. then add some olive oil (or other finishing oil) and minced garlic. Toss it around to coat (and the heat will cook the garlic) add some salt and pepper and serve. It's delicious!

Stir-fry veggies! You can choose them or get a stir-fry mix in the frozen section....add some sauce (it is high in sodium, so be easy) and yum!

Toss 'em with a bit of EVOO and salt and pepper and roast 'em in a hot (400F) oven. Drizzle with a bit of balsamic vinegar (or not). Top with a bit of feta or goat cheese (or not).

My favs:
Butternut squash - peel, slice in half, remove seeds, cube...roast in the oven with some s & p or any of your favorite spices..yum!

zuchinni boats - slice zuchinnis in half, scoop out just a little in the middle, sautee up some onion, mushroom & tomatoe and use that mixture to put fill your zuchinni, tope with some cheese (ie. feta) and roast in oven.

Almost any veggie can be roasted in the oven at 375 or 400 with a little olive oil and salt and pepper. We do broccoli and cauliflower and brussel sprouts and all types of squashes. Most of the roasted veggies can be turned into a healthy soup with some veggie broth and a blender. Happy New Year!

You can steam pretty much any veggie for 20 minutes and it turns out beautifully.

I also enjoy the roasting. Toss cubed veggies (bite size) in a tablespoon of olive oil with some garlic powder or steak spice. Spread on a cookie sheet and bake in the oven at 400 degrees for 35 minutes.
